Easy Potato Casserole

This one is so easy and tastes wonderful.

Mix 1 large bag hash brown potatoes, 2 cans cream of mushroom soup, 2 soup cans milk, 1 (16 oz.) carton sour cream, 1 pkg. shredded cheddar cheese, and coarsely ground pepper and minced onion. Place in a greased 13 x 9" baking pan. If desired, top with sliced green peppers.  Bake uncovered at 350 degrees for 1 1/2 hrs., or until browned on top. Let cool and serve. Enjoy!

 

Old Fashioned Macaroni And Cheese

Very creamy and good!

Cook 1 box elbow macaroni, drain. In separate pan, melt 2 TBSP. butter. Whisk in 1/4 c. flour. Add 2 c. milk. Stir in 1 cup shredded cheddar cheese and 8 oz. Velveeta cheese. Cook and stir until thick.

Add macaroni and stir well. You may eat it now, or bake it 30 minutes in a greased pan on 350 degrees, covered.

 

Thanksgiving Stuffing

Mix this finished recipe with 2 boxes prepared Chicken Stove Top Stuffing.
 
Range Top Pecan Dressing
(The pecans can be left out)
 
8 cups white toasted bread cubes
2 cups diced celery
1 small onion, diced
1/4 cup fresh parsley, chopped
1/2 c. butter or margarine
1 4 oz. can mushrooms
1 (13 oz.) can chicken broth
2 tsp. sage
1/8 tsp. pepper
1 c. pecan halves
 
Melt butter in saucepan. Cook celery and onion about 10 miniutes in butter until tender. Add parsley, cook 2 more minutes. (I omitted the parsley, as I didn't have it). Drain mushrooms, reserve liquid. Add enough water to liquid to make 2/3 cup. To onion mixture, add mushrooms, reserved mushroom liquid, chicken broth, sage, and pepper. Cover and simmer 5 minutes. Remove from heat. Stir in toasted bread crumbs and pecans. Cover and let stand 5 minutes. Serves 6-8.

 

 

Sweet Potato Bake


2 large cans sweet potatoes, drained and mashed with a potato masher
1 c. sugar
1/2 c. butter, melted
1 tsp. vanilla
2 eggs


Topping:

1 c. brown sugar
1 c. pecan halves
1/2 c. flour
1/3 c. butter, melted

Mix together mashed sweet potatoes, sugar, 1/2 c. melted butter, vanilla, and eggs. Place in a greased 13 x 9 x 2" pan. Mix topping ingredients and sprinkle evenly over sweet potato mixture. Bake, uncovered, at 350 degrees for 30 minutes.

 

 

Jane's Oven Potatoes

1 pkg of frozen  Hash Browns or Hash Browns with Peppers and Onions, broken up

1/2 cup melted margarine/or butter

1 tsp salt

1/4 tsp pepper

2 cups sour cream

1/2 cup chopped onion

1 cup cream of chicken soup

2 cups of grated cheddar cheese

mix together & put in greased pan.....

Preheat oven 325 degrees.

Topping........1 cup of crushed corn flakes

 1/4 cup melted margarine/or butter .  Mix

Sprinkle on top.

Bake 1 hr uncovered.

 

Easy Scalloped Potatoes

Grease a 9 x 13" pan. Peel potatoes and layer slices 1-2 layers thick. Sprinkle well with minced onion, salt, and pepper. Sprinkle 2 cups shredded cheddar cheese over. Whisk together: 1 can mushroom soup, 2 soup cans milk, and 1/4 cup flour. Pour over potatoes. (Add more milk if this does not cover the potatoes). Cover with foil. Bake at 350 degrees 1 hour. Then uncover and bake 30 minutes more.
